Et partager en famille son propre foie gras est un plaisir d\u00e9lectable.<\/p>\n<p style=\"text-align: justify;\">Recette des Toques Rebelles (cours de cuisine \u00e0 Caen) :<\/p>\n<p style=\"text-align: justify;\"><span style=\"text-decoration: underline;\"><em>Ingr\u00e9dients :<\/em><\/span><\/p>\n<ul>\n<li>1 lobe de foie gras cru de 400\/500 g<\/li>\n<li>7 g de sel<\/li>\n<li>2 g de poivre<\/li>\n<li>2 g de sucre<\/li>\n<li>Noix de muscade<\/li>\n<\/ul>\n<p style=\"text-align: justify;\"><em><span style=\"text-decoration: underline;\">Pr\u00e9paration (30 minutes + 8 minutes de cuisson) :<\/span><\/em><\/p>\n<ul>\n<li>Ouvrir le lobe de foie en deux<\/li>\n<li>A l&#8217;aide du manche d&#8217;une cuill\u00e8re \u00e0 soupe, d\u00e9gager d\u00e9licatement les vaisseaux sanguins qui irriguent le foie en tirant dessus (cette op\u00e9ration s&#8217;appeler d\u00e9veiner et non d\u00e9nerver).<\/li>\n<li>Disposer le foie ouvert sur un plateau<\/li>\n<li>Dans un bol, m\u00e9langer les assaisonnements<\/li>\n<li>Assaisonner \u00e9quitablement les deux faces du lobe<\/li>\n<li>Reconstituer le lobe sur une feuille de papier sulfuris\u00e9 (ou torchon). Refermer le papier et rouler afin de donner une belle forme de rouleau. Fermer herm\u00e9tiquement en attachant tr\u00e8s fort les extr\u00e9mit\u00e9s. Emballer le tout dans du film alimentaire en liant \u00e0 nouveau les deux bouts.<\/li>\n<li>La cuisson : porter une marmite d&#8217;eau \u00e0 \u00e9bullition. Couper le feu et plonger le foie gras, couvrir et compter 8 minutes.<\/li>\n<li>Aussit\u00f4t le sortir et le plonger dans un bac d&#8217;eau glac\u00e9e environ une demi-heure<\/li>\n<li>Ensuite le stocker au r\u00e9frig\u00e9rateur.
